Description

Once deboned, the thigh is refined and then defatted, dry-salted and smoked by burning beech wood. Afterwards, the curing phase is lasting for a minimum of 8 months at constantly controlled temperature and humidity. Once the curing period is complete, the Speck is washed, dried, skinned, sliced and packaged in a protective atmosphere.
