Pecorino Romano is a hard Sheeps milk cheese produced exclusively on the plains of Lazio and has been matured for eight to twelve months.Mainly used in pasta dishes as a substitute for Parmigiano Reggiano and of couse used as an ingredient to make the best Pesto it has been called the poor mans Parmasan.
