Description
Fresh ricotta is a soft whey cheese. Ricotta is produced by recovering whey protein by heat precipitation. The Italian name ricotta can be translated in English to “re-cooked”, which give a hint about how ricotta is made: the first cooking happens when the cheese is made, while the second cooking is referred when the whey. In our recipe consists in adding the fresh milk to the cheese whey to make the ricotta more creamy and with a unique fresh taste.
