Anchovy sauce is a product made from salted, headless and gutted fish seasoned for a duration that varies according to the climatic conditions but not less than sixty days. Anchovies salted are centrifuged in order to collect the liquid which is then filtered. The product obtained is poured into regularly labelled bottles.
