Description
The salami “Napoli” has an external surface of deep red colour, a compact and non-elastic consistency, a slight scent of smoke, a sweet and characteristic taste, slightly spicy.
The slice has an intense red colour, the dough appears compact with medium grain, with a clear distinction between the bright red colour of lean meat and white of fat.
The consistency is dry.
